Ingredients
1 cup whole wheat flour
1/2 teaspoon baking soda
pinch of salt
1/2 cup butter
3/4 cup Splenda brown sugar
2 egg whites
1 teaspoon vanilla
1 cup natural crunchy peanut butter
Directions
- sift together flour, baking soda and salt- set aside
- with electric mixer cream together butter and brown sugar
- in another bowl mix egg and vanilla and then gradually add to the sugar mixture
- stir in peanut butter and blend. stir in dry ingredients. chill for at least 30 minutes or until firm
- preheat oven to 350. grease baking sheets.
- spoon out rounded teaspoonfuls of dough and roll into ball.
- place balls on baking sheets and press flat with fork (that's how you get the criss cross pattern on the tops).
- bake for 12-15 minutes, until light in color.
- ENJOY!
I added some semi sweet chocolate chunks to mine as well and Future Mr said these were "THE BEST" peanut butter/chocolate chip cookies "EVER". Let me know how you like them!
