mmm...mmm...good!

I got my cooking mojo back! Mr. Husband thinks this is a VERY good thing! FINALLY! We went through a rough few weeks where the very THOUGHT of cooking made me want to gag. We did lots of fast food for these few weeks, even though Mr. Husband claims he’s a “good cook”, really babe? Then where’s dinner!? Just kidding, I totally didn’t mind eating dinners consisting of Chipotle, Subway, and Panera Bread.

So we’re back to eating at home, Mr. Husband’s complaint? I never cook the same thing more than once! I just LOVE trying out new recipes and don’t want to be one of those families that gets into the rut of macaroni Mondays, taco Tuesdays, whole wheat {pasta} Wednesdays, turkey Thursdays, and French fry Fridays. The only problem with this is we will have a DELICIOUS dinner and then never have it again because I’m always trying out something new. Poor Mr. Husband can never get excited for dinner because he never knows what we’re having!

Well not this week! This week we’re having some classics that I know he loves. Starting with tonight’s dish, one of my mom’s standbys and my dad’s favorite {if he knew I was making this tonight I’d be in SO much trouble for not inviting him over}, pork chop casserole! It’s so easy and definitely a crowd pleaser….

Pork Chop Casserole:

- 1 package frozen CUBED hash browns {used the shredded before, NOT THE SAME}

- 1 cup milk

- 1 cup sour cream

- ½ can Durkee fried onions

- ½ bag shredded cheddar cheese

- 1 can cream of celery soup

- 4{ish} pork chops

- Oil, salt, pepper, garlic salt to taste

Brown pork chops in skillet with oil, salt, pepper and garlic {to taste}.

Mix all other ingredients (saving other half bag of cheddar cheese and half can of fried onions) in a mixing bowl and then pour into 13x9 baking dish.

Place pork chops on top of mix.

Cover and bake at 350 for 45 minutes.

Remove and sprinkle with remaining cheese and fried onions and bake another 15 minutes uncovered.

Viola! Not the healthiest recipe I know but pleasing Mr. Husband’s pallet doesn’t always mean health food is involved. If you try this please let me know how you like it!!!
