Weight Loss Update Tuesday

Hmm...ok so I found out my scale at home is OFF, meaning it says I weigh MORE than I really do! So today's update will be the last update w/the incorrect weight. I can definitely see more definition and my clothes all fit so much better so I know it's working but when that scale doesn't budge it's hard to keep motivated.

So I watched Twilight last night, finally, and I must say I was quite disappointed. I thought it was so cheesey and the way it was filmed was annoying. Kristen Stewart is the most miserable looking girl they could have possibly cast for Bella. She did nothing for the character, IMO. I know this is a "teenage" book/story but I thought for as good as the book was the movie should have been so much better. The ending of the book was rather long and in the movie it was really rushed. IDK but I was not impressed, so much so that I don't know that I want to even continue w/the series.


*Sidenote* I do have a slight man crush on Rob Pattinson now though...

Some Yummy (and healthy) Recipes

So I have been doing the SB Diet for about 4 months now and have come across some very yummy and good for you recipes. Thought I'd share.

From SB Diet Cookbook- phase 2 (Oh and I used deer meat instead of beef or turkey)
Mexican Lasagna
1 lb. extra lean ground beef or turkey breast
1/2 large onion, chopped
1 large clove garlic, minced
1 1/2 cups low-fat cottage cheese
1 cup fat-free sour cream
1 jar (4 oz.) chopped green chile peppers
1/2 cup chopped cilantro (optional; I used it)
2 tsp. ground cumin
1/8 tsp. salt
2 1/2 cups salsa
4 whole wheat tortillas (6" in diameter), halved
1 1/4 cup (5 oz.) shredded, reduced-fat Monterey Jack Cheeses
Preheat the over to 350 degrees. Coat a 13" X 9" baking dish wiht cooking spray, and place over medium heat. Add the ground beef or turkey and cook, turning several times, for five minutes or until no longer pink. Remove the meat to a edium bowl. Wipte th skillet with a paper towel. Coat the skillet with cooking spray. Place over medium heat. Add the onion and garlic. Cover and cook, stirring occasionally, for 7 to 8 minutes, or until lightly browned. Add to the meat in the bowl. In another mediium bowl, combine the cottage cheese, sour cream, peppers, cilantro, cumin, and salt. Spread 1 cup of the salsa across the bottom of the baking dish. Arrange half of the tortillas evenly over the salsa. Spread half of ht echeese overthe tortillas. Top with half of the meat mixture. Top with 1 cup of the remaining salsa and 1/2 cup of the MOnterey Jack cheese. Repeat the layering sequence with the remaining tortillas, cheese, and meat mixture. Sprinkle with the remaining salsa and 3/4 cup o Monterey Jack cheese. Bake for 30 minutes, or until heated through. Loosely cover with foil if the cheese browns too quickly.
Nutrition: Per Serving: 250 calories, 8 g fat, 4 g saturated fat, 24 g protein, 24 g carbohydrates, 3 g dietary fiber, 50 mg cholesterol, 840 mg. sodium


Greet-the-Sun Breakfast Pizzas
Prep time: 10 minutes Start to finish: 20 minutes Serves: 4

Ingredients:
5 teaspoons extra-virgin olive oil, divided
4 ounces packed spinach (4 cups)
2 (6-inch) whole-grain pitas, halved horizontally
2 large plum tomatoes, thinly sliced
4 large eggs
1⁄4 teaspoon salt
1⁄4 teaspoon freshly ground black pepper
2 ounces reduced-fat feta cheese, crumbled (1⁄3 cup)
Directions:
Preheat oven to 450°F.
In a large nonstick skillet, heat 1 teaspoon of oil over medium heat. Add spinach, in batches if necessary, and cook until wilted, 2 to 3 minutes.
Brush inside of each pita round with 1 teaspoon oil. Place pita rounds, oiled side up, on a large baking sheet and bake until starting to brown, about 5 minutes. Remove from the oven.
Divide tomatoes and spinach evenly among pita halves, leaving an empty space in the center of each for an egg. Crack 1 egg into the center of each pita. Sprinkle with salt and pepper, return to the oven, and bake until yolks are lightly set, 8 to 10 minutes. Sprinkle with cheese and continue baking until cheese has softened, about 2 minutes more. Serve warm.

Whole-Wheat Pizza Margherita
Serves: 8
Details:
Sometimes nothing satisfies like a slice of cheesy pizza. This one's made with a whole-wheat crust and part-skim mozzarella, so it's ideal for South Beach Dieters — and anyone in the mood for a slice.
Tip:
Note: If you don't have a rolling pin, use a wine bottle or stretch the dough out with your hands. If the dough springs back too much, let it rest for 3 minutes to relax the gluten. The cornmeal on the pizza stone or baking sheet makes the crust dry and crunchy. The basil shouldn't go on until after baking, or it will burn.
Ingredients:
Crust:
1 package (1/4 ounce) active dry yeast
1 cup warm water
1 tablespoon extra-virgin olive oil
2 teaspoons salt
2 1/2 cups whole-wheat flour, plus additional for kneading Topping:
2 large tomatoes, thinly sliced, then cut into half circles
8 ounces part-skim mozzarella, thinly sliced into half circles
Extra-virgin olive oil (optional garnish)
8 fresh basil leaves, thinly sliced
Dash of cornmeal for pizza stone
Directions:
In a medium mixing bowl, combine yeast and warm water; let sit until yeast foams, about 5 minutes. Stir in oil and salt. Add flour, 1/2 cup at a time, mixing with a large spoon, until dough comes away from the side of the bowl and holds together.
Sprinkle additional flour onto work surface. Turn out the dough and knead about 5 minutes, until it is smooth and springy, adding only enough flour to keep it from sticking to the board.
Form dough into a ball; place in a medium bowl. Cover with plastic wrap and put in a warm place. Let rise until doubled in size, about 2 hours.
To make pizza: Preheat oven to 475°F. Place dough on lightly floured work surface; flatten with your hand. Using floured rolling pin, roll dough outward from the center. Form dough into a circle or rectangle about 1/4-inch thick.
Sprinkle pizza stone or baking sheet with cornmeal. Lay crust on stone or sheet. Lay alternating slices of tomato and cheese on top of the crust, slightly overlapping each piece. Lightly drizzle with additional oil, if desired.
Let pizza rest 10 minutes. (This step can be skipped, but it makes for the crispiest crust.) Place pizza in oven and bake 20 minutes, or until cheese is melting and browning a bit. Sprinkle pizza with sliced basil leaves.

Chicken Capri (from the book)- Phase 1
1 cup reduced fat ricotta cheese
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp graound black pepper
4 boneless, skinless chicken breasts
1/2 tsp garlic powder 2
tbsp extra virgin olive oil
1 cup crushed tomatoes
4 slices reduced fat mozzarella cheese

In a blender or food processor, combine the ricotta with the oregano, salt, and pepper. Process to blend. Rub the chicken with the garlic powder. Heat oil in skillet over medium high heat. Add the chicken and cook for 12 minutes per side. Place the chicken in a large baking dish. Preheat oven to 350. Spoon 1/4 of the cheese mixture and 1/4 cup tomatoes onto each chicken breast. Top each breast with 1 slice mozzarella cheese. Bake for 20 minutes.

Broccoli Chicken Dijon- Phase 1 Prep
Time: 15 min Total Time: 30 min Makes: 4 servings
1/2 cup reduced sodium chicken broth
1 Tbsp. lite soy sauce
4 cups broccoli florets
1 clove garlic, minced
1 Tbsp. olive oil
1 lb. boneless skinless chicken breasts, cut into thin strips
2 Tbsp. GREY POUPON Dijon Mustard

MIX chicken broth and soy sauce; set aside. COOK and stir broccoli and garlic in hot oil in large skillet on medium-high heat until crisp-tender. Remove from skillet; cover to keep warm. ADD chicken to skillet; cook and stir 3 to 4 minutes or until cooked through. Add broth mixture; mix well. Bring to boil. Reduce heat to medium-low. Stir in mustard until well blended. Return broccoli mixture to skillet; mix lightly. Cook until heated through, stirring occasionally.

Turkey Swedish Meatballs -Phase 1
3/4 tsp salt
1/2 tsp ground Allspice (KEY ingredient)
1/4 tsp ground black pepper
1# ground turkey breast
1 Tbs EVOO
3/4 cup low sodium chicken broth
3 Tbs lf sour cream
2 Tbs chopped fresh parsley

Mix together salt, allspice and pepper in a medium bowl. Add turkey and gently mix with hands to combine (do not overmix!); shape into 24 (1-inch) balls. Heat oil in a large skillet over med-high heat. Add meatballs and cook until browned, about 3 minutes. Lower heat to med and cook 3 more minutes, gently shaking pan. Using a slotted spoon, transfer meatballs to a plate. Add broth to the same skillet, increase heat to med-high, and simmer until liquid is reduced by half, about 5 minutes. Whisk in sour cream and cook 1 minute more. Add meatballs. Sprinkle with parsley and serve hot.

Makes 4 servings (6 generous sized meatballs) Per serving: 180 calories, 7 g fat, 1.5 g unsaturated fat, 29 g protein, 1 g carbohydrate, 0 g fiber, 230 mg sodium

Chocolate Chip Oatmeal Cookies
INGREDIENTS:
1/2 cup margarine, softened
1/4 cup packed Splenda brown sugar
1/4 cup regular splenda
1 egg 1 teaspoons vanilla extract
1/2 to 3/4 cups WW flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups quick-cooking oats
1/2 cup semisweet chocolate chips

DIRECTIONS: Preheat the oven to 325 degrees F (165 degrees C). In a large bowl, cream together the butter, brown sugar, and splenda until smooth. Beat in egg, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the oats, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets. Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

All of the dinners you can add brown rice or whole wheat pasta to. IMO the WW pasta takes some getting used to and you have to shop around to find one that you like (some can be gritty and grainy) but once that's all you eat you don't even care. Enjoy!!!

Cold, Cold Go Away Come Again Some Other Day (Or Not)

Ugh I am so sick of the freezing cold!!! It was a nice warm(ish) day Saturday, cloudy yes but at least I could break out some spring clothes, and then yesterday SLEET!!!! Please, spring, please come soon! Look at all the cute spring clothes I bought!!!

I love love

Ok everyone has a "list" of qualities/requirements they hope to find in a significant others. I have heard time and time again that you should never have such a list b/c you will never find a person who meets all of those standards...enter Future Mr. Future Mr fits my personal requirements to a tee, leaving nothing out.

I hear that girls look up to their dads and look for their father's qualities in their mate, this is definitley true of me. My dad is not only an amazing father but a wonderful man. Future Mr reminds me of him so much in the way that he isn't afraid to take on anything, he's a true man's man and wants to be the provider, he can (or at least tries) fix anything from a broken car to a broken heart.

I always loved guys who were a little tough but in a demure way. Future Mr is tough, he is strong, but he is not mean or a bully. He will stick up for his friends or get in a fight with a guy who tries to put the moves on me but he is never aggressive...love this about him.

I have always had a thing for musicians. Loved John Mayer's song 'You're Body is a Wonderland', my favorite line is "never let your head hit the bed without my hand behind it", I always thought it would be so romantic to have a song, or even a lyric, written about you...*butterflies*. On our first "trip" together Future Mr took us to a cabin in Beaver, OH, the first night there he played the guitar and sang me a song that he had written about us and I thought "this is it, this is my 'You're Body is a Wonderland'!" I was smitten needless to say.

I want a man that can shop, not necessarily likes to or wants to but will b/c I love it. Future Mr isn't really into fashion or shopping but he has no problem wandering about Easton with me just b/c it's a beautiful day and we have nothing better to do.

I have amazing friends and needed someone who was going to love them just as much as I do. Future Mr could not fit in more perfectly with my circle of friends, guys and girls alike. Although he may not agree with all of them, he still loves hanging out with them and that means the world to me. I remember the first time I introduced him to the BFF she said "He reminds me of someone" and I said "REALLY? Who?" and she said "YOU!", loved that. I love that he can hang out with my friends' husbands/boyfriends when we aren't around and still feel totally comfortable. I guess they better get used to it b/c none of them are going anywhere as far as we ladies are concerned.

Along with my friends, my family is second to none. I have put them through a lot in my short life but no matter what they always have my best interest at heart and love me unconditionally. It took me a little while to realize that but at the end of the day family is what matters the most. Future Mr and I have similar pasts with our families and now understand the importance of them more than ever. I love that he gets along with his mom so well and he is so sweet with her in the way that he always looks out for her all the time. He's also any father's dream; he is an athelete, a hunter, and worker. He is going to make his dad very proud one day. Not only does he have an amazing bond with his family but he truly loves mine, and vice versa. I remember the first time I brought him to my parents' my mom's first words were "OMG, dude! He's so cute!" LOL! My dad, a normally very quiet guy, does not shut up around him. They talk for hours, about who knows what. I love the Dews, I truly feel like they are already my family and they have welcomed me with open arms. I hope to do them proud when I become one of them on October 3rd.

As I said earlier, Future Mr is a worker. This is such an important characteristic and one that Future Mr takes a lot of pride in. Never in my life have I seen someone who is BEYOND exicited to put in 50+ hours at work. Even now that he is doing physical work (sometimes outside in the cold) he never complains. I love this quality of his b/c it shows he has dedication and this goes beyond the workplace.

I have never been at a place in my life where I felt like I could truly trust someone, and trust is #1 on my list. Future Mr has my complete 100% trust, without a shadow of a doubt. I trust him with my heart, my dog, my car, my life. I know that he will never do wrong by me and that is the biggest relief. I know when he says he's going somewhere or doing something that he's doing just that, unless he's trying to throw me off b/c he's planning a surprise. Which leads me to my next quality...

I LOVE surprises! Seriously surprises are one of my favorite things and I hate myself b/c I am such a thinker that I usually figure them out and ruin it. Future Mr is awesome at surprising me. For example, last night I went running and I made mention of needing a pedometer so I could register how far I was running. Future Mr came home from golf and had a pedometer with him, made my night! It's just little silly things like that that melt my heart.

I'm sure the list goes on, and believe me if it does he will continue to fulfill the requirements. For now I leave you with some pictures of my love, my heart, my world.

Oh Yeah...





This is our first St. Patrick's Day together and unfortunately Future Mr has class tonight :-( on his favorite holiday! Hopefully he'll get out early and we can still celebrate a little.

30 Day Shred

So a lot of people have jumped on the 30 Day Shred by Jillian Michaels bandwagon and I am one of them! I have been doing it for about a month now and man am I seeing results. Future Mr thinks I am obsessed b/c I get up at 5 am to do this and he's just barely making it into the shower at that time. The video is broken down into 3 levels and you gradually progress at your own rate. I am on level 2 now and man it's a butt-kicker. Jillian is not kidding around, if you want a good 20 minute workout, this is it! I would say in the past month I have gotten noticeably stronger and my body has less fat on it. J even says "man babe, there's hardly anything to grab anymore", not sure how to take that but I think it's good. Boys! Anyway if your looking to do it I'd recommend 3-5 lb. handweights. I tried starting off w/some 8 lb. weights and could barely do the workouts in level 1. The 3 lbs. seem a little too light now that I am used to it so I think I'm going to have to invest in some 5 lbs. Anyway I highly highly recommend this, it's a great alternative to spending an hour or so at the gym (I sweat more doing this than running 2 miles). Here's some before and afters...

B Pics Update

Seriously who knew getting naked in front of strangers could be so fun!? The pics went amazingly well this weekend! Maria and Jon (www.iqfoto.com) were so easy to work with and really made me feel like a goddess. Maria told me the first 5 minutes would be the worst and she was right, it was all uphill after that. I am so glad I did these and truly felt like a million bucks when I left that night. If anyone is thinking of doing them for thier significant other I'd highly recommend them. Maria showed me a few images throughout the shoot and I couldn't believe my eyes, "That's me?!" was all I could think! I cannot wait for her to send me some teasers. This is going to be very hard to keep from Future Mr so thankfully I got the DVD and I'll make my own "For Your Eyes Only" book closer to the wedding that way I won't be so tempted to just whip it out and give it to him on some random Wednesday.

B Pics Saturday

EEEEEeeeek! I have my boudoir pics this Saturday at 8pm! I am so excited and nervous at the same time. I know they are going to be amazing as Maria (www.iqfoto.com) is a wonderful photographer and very talented when it comes to making the girl look her best. I wanted to lose 20 lbs before I did them but I only managed to lose like 8, LOL. I have a few outfit ideas...
1. Casual- ripped jeans and a white bra, I will incorporate FIs acoustic guitar in these
2. Girlie- a baby blue and white baby doll set from the VS bridal collection
3. Sexy- hot pink and black rubber/vinyl look corset w/garters and thigh highs
4. Every guys dream- men's white button down and undies
5. Bride- blue Mrs. Dew boy shorts w/a white wife beater tank that says "Bride...sexy little thing" in rhinestones
6. Glamour- ivory lace boy shorts w/a big bow on the butt, pearls, ivory patent heels

I think between those I'll have all my bases covered ;-) I'll post a few when they are done! Wish me luck!

Time For a DIY

Ok so this weekend Future Mr will be working out at his family's farm which leaves me home to try and accomplish my first DIY project! When I met w/florists I mentioned wanting pomanders for the ceremony and was quoted $65 per pomander! CRAZY! I figure I can make ALL of them for about that price. I am not very crafty, which is why I am starting now (gives me plenty of time to mess up and get it right). If anyone has any tips, advice, dos and don'ts, I'd really appreciate it! Here's what I'm going for

HAPPY BIRTHDAY TO ME!

I had an amazing 26th birthday! We went to Buca Di Beppo for dinner and out to Frog, Bear, Wild Boar for some dancing. It was a blast and Future Mr got us a super nice hotel room which made it so convenient to get wasted and not have to drive home! Thanks to everyone for coming out <3
